Meticulous grower and winemaker Bernard Moreau has been in charge of his small family domaine since 1982. He has just two hectares of Chardonnay, between 24 and 32 years old, so yields are naturally low and flavour is wonderfully concentrated. He tends his vines with the utmost care, using sustainable, environmentally friendly methods. All the grapes are hand picked, then the wine fermented and aged in barrel. While a quarter of these casks are renewed each year, most are 400-litre in size, rather than the usual 225-litre. This lends just the right balance of creamy roundness, crisp minerality, elegance and gentle vanilla complexity. From the outstanding 2019 vintage, a wine best enjoyed cellar cool. Delicious paired with salmon.
