Wine Advocate wrote, "Daniel-Etienne Defaix is one of Chablis's personalities, and his wines are no less characterful." Founded by monks 800 years ago, the domaine has 28 hectares of vines on some of the appellation’s finest sites. The 14th generation to work the estate, Daniel-Etienne is meticulous in both the vineyard and the cellar, creating wines that are built to last. Les Lys lies at the top of Vaillons 1er Cru and is north facing, so the grapes ripen slowly. Malolactic fermentation and over a decade's ageing on lees in tank, with monthly bâtonnage (stirring of the lees), lend real richness, structure and weight. 2010 was a top vintage, producing balanced wines that have aged very well. Serve cool in large glasses with fine seafood.
