The Spirit
Founded in 1893, Balvenie distillery has a long tradition of producing fine single malts. It’s also one of only a handful of distilleries to malt their own barley as they are surrounded by their own 1,000 acres of fertile Banffshire farmland. Malting is still carried out on a traditional malt floor. The Doublewood Malt series does what it says on the label – this fine Speyside malt is first aged 11 years in barrels previously used to age bourbon whisky, then given a final nine-month flourish in butts that formerly held oloroso sherry. You can imagine how much richness and sweetness this lends to this mellow malt. Dried fruits, toasted nuts, vanilla and spice, with hints of sultanas … the flavours go on and on. Sip and savour slowly.
