Irish whiskey is today enjoying a renaissance, growing from 4 distilleries in 2008 to the 40 there are today. They are renowned for leading the way with their Single Pot Still distillation which includes a portion of unmalted barley in the mash bill. One of those distilleries is The Whistler in the Boyne Valley which innovatively combines their great whiskey with fresh Irish cream from grass-fed cows to make this luxurious Irish cream liqueur. A joy to sip solo, to combine into a cocktail or to jazz up the bedtime cocoa!
