Flavour Profile
Fans of silky, honeyed sweet white wines will be familiar with the world-famous wines of Sauternes, but there’s a more budget-friendly alternative just across the Garonne River, in Cadillac. Its wines are known for their candied citrus and stone fruit and honey flavours and smooth, silky texture. So, it’s no surprise that estates like Château Fayau have been producing wines here for over 200 years.
The first wine produced by the estate’s founder, Jérome Médeville, 200 years ago, Château Fayau Cadillac is still made with the same blend of Sémillon, Sauvignon and Muscadelle Jérome used.
The flagship wine of this historic estate, it’s brimming with sweet, candied pineapple and orange, juicy apricot and silky honeyed flavours. A ray of sunshine in the glass, it is a delicious partner for chocolate mousse, tarte Tatin and raspberry sorbet, as well as with savoury dishes like Thai prawns and goat’s cheese salad.
