The Spirit
The Silent Pool distillery occupies an extraordinary location on the banks of the legendary Silent Pool within the Duke of Northumberland’s Albury Estate in Surrey. A vintage wood-fired steam boiler powers a copper still, hand built by Arnold Holstein in Germany. Silent Pool’s signature gin features 24 botanicals chosen for their unique qualities and all working together for a complex flavour. Fresh floral and clarifying citrus notes are grounded by earthy and spicy cassia bark and cubeb, a tropical shrub belonging to the pepper family that bears pungent berries. The smooth finish is achieved with the help of local honey. A refreshingly individual gin, best served with a generous handful of ice, a dash of tonic and a twist of orange peel.
