The Wine
Established in 1974 by Tim Knappstein, this winery was key to the rise of the Clare Valley and its reputation for fine, ageworthy Riesling and superb Cabernets. Tim was a pioneer of his time and today the winery can still boast some of the region’s finest vineyards. It also has one of its most historic buildings – a former brewery built in 1878 by Fanny Filgate to slake the thirst of local miners – which it uses as its winery. Knappstein’s Cabernet vineyards lie to the north of Clare Valley, planted on prized terra rossa soil over limestone, which promotes low yields and wines of terrific concentration, bold flavours and freshness. Over the years, this wine has won many Trophies. Open early and decant. Ideal with a rare steak.
