The Spirit
Established in 1923 by Shinjiro Torii, Yamazaki is Japan’s oldest malt whisky distillery. Its initial inspiration were the fine malts of Scotland, but today it makes fine whiskies shaped by the very different terrain and climate of Japan. The distillery is named after the suburb where it was built, on the edge of Kyoto, where three rivers meet, producing some of Japan’s softest water. That helps to promote the delicately nuanced flavours of its malt whiskies, along with their use of different casks in the ageing process – American, Spanish and Japanese Mizunara oak, as well as ex- Bourbon and sherry casks for special releases. Tropical and spiced with candied orange, vanilla and oak spice, this is a very fine Japanese single malt.
