Jean-Marc Sauboua is our top winemaker in Bordeaux. Classically trained at first growth Château Haut-Brion, he's embraced this hipster style of Orange wine with gusto. Taking pristine quality grapes – Sauvignon Gris for lemon spice and weight and Sauvignon Blanc for grassy freshness – he fermented them on their skins. Just like you do a red wine. Here it lends the orange hue and extra flavour. It's minimal intervention, so nothing is added to prevent oxidation and wild yeasts are used for the ferment. So, the winemaker has to take enormous care to make sure the wine stays healthy and bright, but extra interesting too! No sandals and beard required to drink this wine. Enjoy chilled with creamy chicken, crab risotto or herb and feta pie.
