From a family long established in Chablis, Samuel Billaud started his winemaking career in 1985 at the renowned Domaine Billaud-Simon. He decided in 2009 to set up on his own and started out by buying in top-quality grapes, before inheriting some prized Premier Cru vineyards from his father. Today, he has carved out a reputation as a leading figure in Chablis. This luscious white Burgundy is crafted from grapes grown just outside Chablis and some from a friend's vineyard in the Mâconnais. Together they combine the steeliness of the former with the more rounded fruit of the latter, while lees ageing lends extra richness and breadth. For drinking now, open early and decant or cellar a while longer. A fine white with salmon or chicken.
