The Story Behind the Bottle
Admittedly there is something very special about Burgundy's finest whites and their complex flavours. But they come at quite a price. We have discovered that, if you know where to look, there are remote, high-altitude sites within the Languedoc that can produce Chardonnay of real finesse, much like a good Burgundy. Winemaker Vivien Agostinho knows one such vineyard up in the Montagne Noire foothills, close to Carcassonne. The soil is very rugged and stony here, the climate cool, but the well-tended vines produce grapes of real class. Vivien loves to push the boundaries to produce a wine that really speaks of where it's from. Lees aged, it's a perfect balance of fresh citrus, buttery notes and ripe stone fruits. Great with salmon or chicken.
